If you do not want double spaces between lines, hold Shift when you hit Enter.
If you want to create a new page, use Add sub page. This will create a sub page of the page you are currently in. For example, if you were to add a sub page from this page (Wiki Helpers) called Tables, it would be under Wiki Helpers in the hierarchy.

If you want another sub page for Wiki Helpers, make sure you are in the page Wiki Helpers, then click on Add sub page on the left.
You need to think in terms of hierarchies (Like outlines in English class.)
